Zucchini, Pasta & Pesto

INGREDIENTS

500g pasta (previously cooked and drained)
6 small or 4 medium / 800g zucchinis / courgettes (sliced)
4 medium onions / 600g (chopped)
150g cheese (grated)
5 or more tbs green pesto – regular basil pesto (half of 185g jar)
2 tsp garlic powder
salt
olive oil

EQUIPMENT

large baking dish

METHOD

Fry onions and zucchinis on a little bit of olive oil on non stick frying pan for a few minutes till soft and brownish.
Season with garlic and salt.
Mix pasta and pesto and move into baking dish.
Cover with fried zucchinis and cheese on the top.
Grill in oven for a couple of minutes till cheese is golden brown.

Serves 5-6 people.

    I find that coating the zucchini or courgette in flour before frying (like the Greeks do) makes for a tastier and less soggy specimen. Nice simple recipe though.

    Please try the cauliflower recipe, my 2 year old loves it.
