Vegetarian Spaghetti Bolognese

INGREDIENTS

3 cups dried soya mince
2 vegetable cubes
3 cups boiling water for soy mince
500g spaghetti
salt
few tbs of oil
3 large onions
1 whole garlic – about 10 cloves (crushed)
1 tbs dried oregano
1 tbs dried basil
2 x 400g tins of chopped tomatoes
4 tbs tomato puree
200g grated cheese
1 cup pitted black olives
10 fresh basil leaves

METHOD

Prepare soy mince with cubes and boiling water.
Fry chopped onions and garlic on oil in a large frying pan till golden brown.
In meantime boil water, add salt and cook pasta.
To the frying pan with onions add soy mince, herbs, tomato puree and chopped tomatoes. Fry stirring from time to time.
When pasta is ready drain and serve to the plates, top it with soy mixture, sprinkle with cheese, decorate with olives and basil leaves.

Serves 5-6 people.
