INGREDIENTS
4 x 185g tins of tuna in brine (drained and flaked)
2 large onions (chopped finely)
2 tbs oil for frying onions (I used Carotino oil)
250-300 ml oil for frying burgers (I use rapeseed or corn oil)
1 tbs Sambal Oelek (chilli sauce)
15 curry leaves
½ lemon juice or less
3-4 eggs (lightly beaten)
1 kg potatoes (peeled)
sea salt
breadcrumbs

METHOD
Boil and mash potatoes. In meantime fry onions and curry leaves on oil till golden brown, add hot sauce and tuna and fry some more. Remove from fire, add potatoes, season with lemon juice, salt and mix well.
In two deep flat plates prepare eggs and breadcrumbs.
Create with hands small balls from tuna mixture, flatten them, deep in egg and then in breadcrumbs and fry in lots of oil on both sides till golden brown.
Drain on paper towels before serving to the plates.
Serve with some vegetables, for instance “Garlic & Lime Beans”.
Serve 5-6 people.
