INGREDIENTS
for chicken and lentils
chicken pieces for 3-4 people
2 tbs grape seed or olive oil
1 onion (chopped)
2-3 garlic cloves (finely chopped)
2-3 dried bird’s eye chillis (crushed)
1 tsp ground turmeric
1 tsp ground cumin
1 x 400g tin of chopped tomatoes
1 cup brown lentils
1 tbs lemon juice
100-150 ml double cream
3 tbs fresh / frozen coriander / cilantro
3-5 cups of water
1½ chicken stock cubes
sea salt
for the rice
2 cups basmati rice
sea salt
1 tsp ground turmeric
4 cups water
METHOD
Place chicken in a large pot, add 1 tbs of oil and cook for a while.
Add 2 cups of water, cubes, turmeric, cumin, chopped tomatoes, chillis and cook covered till chicken start to be soft.
In meantime fry on 1 tbs of oil onions and garlic.
Add to the pot with chicken, add also lentils, lemon juice and coriander. Cover and cook adding gradually water when needed, stirring from time to time.
When lentils are almost ready cook rice with salt and turmeric in uncovered pot.
When chicken and lentils are ready remove from fire, stir in double cream, season with salt.
Serve rice to the plates, top with lentil mixture.
Serve 3-4 people.
