INGREDIENTS
6 medium tomatoes (cut into wedges)
½ large cucumber (cubed)
handful of fresh basil leaves (chopped)
100-150g feta (cubed or crumbled)
1 tbs balsamic vinegar
1-2 handfuls (20-40g) of pine nuts
METHOD
Toast pine nuts over low fire on frying pan till some parts become brown, leave aside.
Combine cucumber, basil, tomatoes and vinegar in a mixing bowl.
Add feta, stir one more time.
Serve to the bowls, sprinkle with pine nuts.
Serve 3-4 people as a side dish.
