Sticky Guava Wings

INGREDIENTS

1-1.2 kg chicken wings – 15-20 wings (cut in 3 pieces)
3 medium onions (chopped)
3 tbs grape seed or corn oil
2½ cups of hot water
1 chicken stock cube (10g)
150g guava jelly / jam or to taste
1-2 tsp jerk seasoning/paste

METHOD

Fry onions with wings on oil, till onions are caramelized. Add 2 cups of water, cube and jerk seasoning. Reduce fire, cook covered till chicken is soft.
Remove cover and cook till chicken is ready and almost burning.
Add ½ cup of water and guava jelly. Cook for a while longer till jelly melt completely.
Serve with mashed potato or “Coconut Rice” and some salad.

Serves 5-6 people.
