[recipe adapted from “Mainly Vegetables” by Colin Spencer]
INGREDIENTS
1 kg frozen cauliflower florets
handful of dried garlic flakes or fresh garlic
6 tbs olive oil
salt
½ cup capers
1 cup pitted black olives
2 tbs chilli sauce or fresh chilli
3 tbs of breadcrumbs or sesame seeds
½ cup of water
EQUIPMENT
large frying pan or wok
METHOD
Place cauliflower, salt, water, hot sauce and oil in a large frying pan.
Simmer till cauliflower is defrosted and almost ready.
Add capers, olives, and sesame seeds or breadcrumbs and fry stirring from time to time till cauliflower start turning golden brown.
Serves 4 people as a side dish.
- Originally recipe was calling for breadcrumbs but I run out of them and I added sesame seeds… it came out delicious.
