INGREDIENTS
750g potatoes – I used organic potatoes from Abel & Cole (washed and cubed)
5 vegetable cubes (10g each)
10 cups of boiling water
750g leeks – I used organic potatoes from Abel & Cole (cut lengthwise, washed and chopped coarsely)
3 tbs olive oil
black peppercorns
½ cup single or double cream
a little bit of raw chopped leek for garnish – optional
ciabatas to serve

large pot with cover
METHOD
Place leeks, potatoes and olive oil in a large pot and cook stirring constantly until vegetables get hot. Reduce fire, add water, cubes and cook covered until potatoes are soft. Remove from fire, add cream and blend using hand blender. Share to the bowls, sprinkle with freshly ground pepper and optionally some raw chopped leek for garnish. Serve with fresh bread on a side, I used ciabata with herbs.
Serve 5-8 people.
