INGREDIENTS
for dough
330ml warm water
1 tbs dried yeast
1 tsp sugar
3½ cups flour
¼ cup olive oil
for topping
100g concentrated tomato paste / puree
2 tsp dried oregano
2 tsp dried basil
1 tsp vegetable stock powder
water
700g white button mushrooms (sliced)
2 small yellow sweet bell peppers (about 250g, chopped)
1 large leek – 250g(sliced)
100g sliced pepperoni – optional
350g cheese (grated)
garlic granules to sprinkle
olive oil
rainbow peppercorns
METHOD
Place yeast and sugar in warm water and keep aside for 10-15 minutes.
Then mix it with flour and oil till dough is smooth and not sticking to hands any more.
Prepare tomato sauce from paste, oregano, basil, stock powder and as much water as needed to make the sauce consistence.
Fry mushrooms on non-stick frying pan for a while, till there is not more excess water and keep aside.
Warm up oven to 150°C (302°F).
Spread dough on 2 non stick A4 backing trays and place them in oven for 15 minutes.
Then put toppings on them, starting from tomato sauce, then ⅔ grated cheese, leeks, peppers and optionally pepperoni.
At the end sprinkle pizzas with the rest of the cheese and garlic granules.
Place in oven for next 30 minutes, reduce temperature if needed.
Share to the plates, season with some olive oil and freshly ground pepper.
Serves 4 people.

No pepperoni for me :-) The kids must have really enjoyed this. Homemade pizza is the best! We had a pizza party once where we supplied the pizza base and basic ingredients and guest are free to bring their own additional toppings because we had a competition for who could create the best tasting and also the most creative pizza :-) It was lots of fun. Some people made dessert pizzas (e.g. nutella, banana, almond flakes). yummm!
