INGREDIENTS
500g cherry tomatoes or mini plum tomatoes
2 tbs olive oil
2 tbs finely chopped fresh mint leaves
salt
rainbow peppercorns (freshly ground)
METHOD
Wash and drain tomatoes, cut in halves.
Season with olive oil, pepper, salt and mint leaves, serve cold.
Taste good with fresh bread and “Hummus”.
Serve 2-3 people.
