INGREDIENTS
500g mange tout peas (trimmed)
4 quite large garlic cloves (chopped finely)
2 handfuls freshly chopped coriander
2 tbs extra virgin olive oil
liquid Maggi seasoning or soy sauce to taste
few tbs of water to cook peas
EQUIPMENT
wok or large frying pan
METHOD
Stir fry peas with few table spoons of water, until soft but still crispy and bright green. If you cook them for to long they may start changing colour and will loose crunchiness. Remove from fire, stir in olive oil, garlic and coriander. Serve immediately.
Serve 4 people as a side dish.
- You can also steam or cook in water mange tout instead of stir frying.
Margot, if I didn’t know any better, I would think you were trying to keep me healthy :wink: . But, you certainly have a knack for making vegetables look downright delicious!
I love mange tout! But what I love more are those dotty napkins!
My daughter adores mange tout and with garlic and coriander I just know they will be heavenly!!
