Fish in Beer & Parsley

INGREDIENTS

1kg frozen white fish
4 eggs
2½ cup flour
2 tsp baking powder
2½ cup beer
1-2 tsp salt
2 handfuls fresh or frozen parsley (chopped)
oil for frying

EQUIPMENT

paper kitchen towels

METHOD

Salt and microwave fish till defrosted and almost cooked.
Mix beer, flour, baking powder and parsley.
Dip fish pieces in beer mixture and with a large spoon place them in deep hot oil.
Fry on both sides till golden brown.
Drain on kitchen towels.

Serves 6 people.
