INGREDIENTS
250g couscous
400 ml boiling water
1 tbs Vegeta (vegetable seasoning)
1 tsp dried basil
1 tsp dried oregano
1 sweet red bell pepper (finely chopped)
½ large cucumber (cubed finely)
3 tbs Carotino or olive oil
garlic granules to taste – optional
METHOD
Place couscous, dried herbs and Vegeta in a bowl, pour over boiling water and leave aside till couscous absorb all water.
In meantime fry on oil red peppers for couple of minutes. I used Carotino for the nice orange colour.
Stir in couscous, cucumber and garlic, fry 1 more minute stirring constantly.
Serve 3-5 people as a side dish.
How delicious! I’m always looking for ways to give my cous cous a flavour boost. It makes such a great staple and I love the flavours you’ve added here!
I agree with Truffle. This couscous would have a delicious burst of flavour!Basil * oregano are an excellent choice for a flavour combination.
