INGREDIENTS
500g low fat natural yogurt
1 large English cucumber (sliced coarsely)
2-3 handfuls of fresh mint leaves
½ tsp sea salt
few more mint leaves for garnish
EQUIPMENT
blender
METHOD
Place all ingredients in a blender and process until smooth.
Share and garnish with mint leaves.
Make 4 small portions.
- Makes perfect drink to be served with spicy food.
- From the same ingredients you can also make “Cucumber & Mint Raita”.
:lol: I will make curry soon just to serve this delicious drink with it. I can only imagine the cooling effect it must have.
Embarrassingly, I’ve only ever had one lassi – a mango one. It blew me away though, so not sure why I dont’ have/make more. Yours looks gorgeous and sounds so refreshing!
Could that possibly look any more refreshing? I think not. Temperatures were in the 90s today, and this drink would’ve been ideal . Lovely color too Margot.

Cucumber and Mint are a great team to have fighting for you when it’s as hot as it has been recently. They stop you wilting for a little while, at least! :smile:
Yeah, I could see me drinking these all day and not bothering with anything else.
Would it be weird to think you could dip grilled Chicken into this, if drinking it wasn’t your thing?
