INGREDIENTS
500g penne pasta
oil for frying
150g grated cheese – optional
3 handfuls of okra (chopped or not)
4 small eggplants (chopped/sliced)
4 medium courgettes / zucchinis or similar vegetables (sliced)
2 tins of chopped tomatoes (each 400g)
4 medium onions (chopped)
4 tbs vegetable stock
1 tbs dried basil
2 tbs garlic powder
2 tbs onion granules
METHOD
You will need medium pot to cook pasta, large non stick frying pan and a large pot to cook everything together.
Caramelise onions and move them to big pot.
Fry on very little oil eggplants, okras and then courgettes and move them to the pot.
In meantime cook pasta.
Add tomato and seasonings to the pot as well and cook uncovered till all vegetables are ready.
Mix in pasta and serve sprinkled with cheese.
Serves 5-6 people.
