INGREDIENTS
3-4 salmon steaks or filets (about 600g)
for marinade
1 unwaxed lemon (juice and zest)
2 tbs oil (I used grape seed oil)
1 tsp dried dill or some fresh / frozen dill
3 garlic cloves (minced) or some garlic granules
sea salt
freshly ground rainbow pepper
METHOD
Combine all ingredients for marinade, pour over the fish and leave it aside for 1-2 hours.
Move salmon to the baking dish, pour marinade over it and bake for 15-20 minutes in 180°C (356°F).
Serve with some baked potatoes and salad on a side.
Serve 3-4 people.
So light and fresh. Just what we need after the holiday.
Salmon, lemon and dill are a great combination! I agree, it is a nice light meal, perfect after all of those big holiday dinners and treats.
