INGREDIENTS
1kg frozen Alaskan Pollock or other white fish fillets
zest of 1 unwaxed lime
1 lime (cut into wedges) to serve
1 tbs Adobo seasoning
2-3 tbs garlic puree
2 large onions (chopped)
50g unsalted butter
EQUIPMENT
deep baking tray
non-stick Teflon sheet
medium frying pan
METHOD
Place fish on baking tray lined with non-stick sheet, sprinkle with lime zest and Adobo, bake in 180°C (356°F). In mean time fry on butter onions until golden, turn off the fire, stir in garlic puree and mix well. Remove tray with fish from the oven, spread evenly on the top onion garlic mixture and put back in the oven. Bake until fish ready and gravy is not too watery.
Serve with some baked potatoes or rice, salad and lime wedges on a side.
Serve 5-6 people.
That sounds like an easy mid-week dinner and really full of flavor. Yum!
It was actually Thursday dinner :) I had very little time to prepare it that is why there is no picture after serving, next time… ;)
