Juniper berries are not real berries, but seeds of different juniper plants, that have appearance like berries. Not ripe berries are green and turn purple-black once mature. Green berries have more pine like flavour, when mature purple ones have lemony fragrance. Mature berries are used in European, especially Scandinavian cuisine to flavour meats. They are used in Polish cuisine for traditional sour cabbage dish – bigos. Green berries are used to flavour gin. In North America juniper berries have milder, sweeter flavour.

If you want a bit different taste in your gravlax (marinated salmon), then before rubbing a filet of salmon with salt and sugar mixture, pour some vodka on it and add crossed juniper berries. Yumm.
