INGREDIENTS
4 eggs (beaten)
300g fresh spinach (washed & chopped)
2 medium onions (chopped)
2 cups of milk
2 cups of self raising flour
2 tsp baking powder
¼ cup olive oil
1 tsp salt or less (depends on how salty cheese you use)
1 tsp ground nutmeg
300g grated mild Cheddar cheese
EQUIPMENT
2 medium size 4 cm (1.5 inches) deep tins
I used 22 cm (8.6 inches) round tin and 18 x 24 cm (7 x 9 inches) tin
METHOD
Mix eggs, milk, flour, baking powder, salt, nutmeg and whisk till smooth. Then add spinach, onions and cheese.
Pour cake mix into baking tins (buttered or covered with Teflon oven liners).
Bake in 140°C (248°F) for about an hour.
Leave aside for a while to settle down before serving.
Serve warm or cold.
