What a beautiful picture.
My sister made a dish with spaghetti squash a few weeks ago, adding tomatoes, minced garlic and ginger, and parsley.
Interesting recipe! In my country, we called it ‘Shark’s Fin’ melon. Instead of pumpkin-like color, it’s oval shape, Green with light green vertical stripes. I used it to make Vegetarian Shark’s Fin soup or stir-fry :-D
Thank you for sharing this variation of using the melon.
It took me a while, but I really spaghetti squash now. So I’ll be giving this combination a try.
