[inspired by Amelita from Squishyness and her Banana Nut Wellingtons]
INGREDIENTS
500g ready puff pastry (removed from the fridge 20 minutes before)
2 tbs flour
9 pinches vanilla sugar
9 pinches burnt orange & cinnamon sugar
3 medium bananas (sliced)
3 medium apples (cut in cubes)
handful chopped walnuts or pecans – optional
1 egg (beaten)
EQUIPMENT
pastry brush
rolling pin
METHOD
Cut puff pastry in 9 square pieces, roll each piece on floured surface with rolling pin or in case you don’t have one with wine bottle :)
Place in the middle of each pastry some apples and bananas, pinch of vanilla and pinch of orange & cinnamon sugar. Bring corners together and close the pastry.
At the end brush all wellingtons with beaten egg, sprinkle with nuts.
Place on lined with teflon sheet baking tray and bake in preheated oven in 220°C (425°F) for about 20 minutes.
Serve hot with vanilla ice cream or cold with a cup of tea.
