INGREDIENTS
3 cups of easy cook rice
6 cups water
salt
3 medium onions (chopped)
oil for frying
2 kg mixed frozen vegetables: broad beans (fava beans), green beans, cauliflower, broccoli, carrots etc.
2 tbs of vegetable stock powder
300-400g cheese spread
1 cup or a little bit less soured cream
3 tbs mild curry powder
METHOD
Prepare rice.
On separate frying pan caramelize onions on oil.
In deep frying pan stir fry frozen vegetables with a little bit of oil.
Add stock and curry powder.
When vegetables are almost ready slow down fire, add onions and cheese spread.
Remove from fire and leave aside for a while.
Stir in soured cream. Serve over rice.
Serves 5-7 people.
