small aubergines / eggplants
Carotino oil
dark soy sauce

silicone brush

METHOD
Cut each eggplant in half lengthwise, with the tip of the knife make cuts all over the open sides. Combine oil and soy sauce in equal quantities, use this mixture to brush eggplants before and several times during baking. Bake in preheated to 180°C (356°F) until soft.
Margot, when I lived at home, “fried” was the only way my mom ever served eggplant. It was good, but I’d love to try your baked recipe; it not only looks wonderful, it’s a heck of a lot healthier, I’m sure. Thank you!
I love fried eggplant but it soaks up too much oil so I stop eating it at all… this version is definitely low in calories, so I can enjoy eggplants again! :D
