Baked Potato Slices and Wedges – Healthier Alternative to Fries

INGREDIENTS

  • 2½ kg potatoes (sliced, cut into wedges, strips like fries or halved if baby potatoes)
  • 3 tbs Carotino or olive oil (Carotino will give potatoes nice colour)
  • sea salt
  • other spices such as cracked pepper, garlic powder, thyme, dill, smoked paprika – optional

METHOD

  1. Mix potatoes with oil, season with salt and optionally other spices.
  2. Bake in the oven preheated to 180°C (356°F), stirring from time to time, until golden brown.
  3. You can turn on grill option towards the end to make them more crunchy.

Serves 4-6 people as a side dish.

NOTES

Taste good in Fries Supreme with some Cheesy Chive Sauce.

    Olga – not really, you can put them on the tray any how… just stir few times during baking. I tired also with sweet potatoes before, you can take a look at it here:

  4. Delicious, we always prepared in this way, but use canola oil.

  5. I prepare potatoes like this a lot, they’re great as you can add lots of different flavours too such as Cajun spice or herbs.

  6. Dear Margot, I just love your potato wedges, which I’ve made a few times. A tip I stole from Jamie Oliver was to par-boil the wedges for 6 minutes, letting them steam off to dryness in a colander, before popping them into the oven – the extra prep ensures a lovely fluffy centre and the outside crisps to perfection in about 30 minutes. My oil of choice is local rapeseed oil, aka canola oil – it grows all around us here in Norfolk! Even if low in Vitamin A, potatoes give us a nice dose of Vitamin C. These wedges beat ‘fries’ for flavour every time and I use cajun spice mix, e.g. H&B, to ring the changes sometimes. All the best, Keith.
