INGREDIENTS
- 8 previously made or ready plain large thin pancakes
- ½ lemon juice
- 4 tbs golden caster sugar or a little bit more
- unsalted butter to re-fry pancakes
METHOD
- Combine lemon juice and sugar and continue stirring until they are well mixed.
- Re-fry each pancake on butter, top with sugar & lemon syrup, fold and enjoy.

I love this way of serving pancakes I use a lime syrup but it’s essentially the same
We often make this for lunch but always go for fresh home-made pancakes, they taste much better.
As with most of our meals we wash it down a while afterwards, this item with some coffee from our regular supplier The Tea and Coffee Emporium.
I love the lemn flavour but may try the lime suggestion, love the flavour of that too.
